Cooking Basics: how to microwave a potato

I realized that how to microwave a potato is one of those typical kitchenette issues that one can have. For you to be able to microwave a full potato there are a couple of things that are needed to be taken into account.

tl;dr: poke the potato all around, microwave on high 5 min on one side, 5 minutes on the other cut in half and microwave some more if necessary.

  1. The skin of the potatoes is important as it would act as a cover and protector so that it does not get that stupid microwave burn.
  2. You will need a microwave-safe plate to get everything going.
  3. Aim to microwave smaller potatoes rather than huge potatoes. They will take less time and make your life easier.
  4. If you can opt for another way of cooking potatoes as this way is only if you have no other choice – not because you are lazy.
  5. Please, please, please carefully wash the potato. They are some of the dirtiest vegetables out there.

How to actually get it done

  1. Poke a washed potato with a fork all around.
  2. In a microwave-safe plate, place the potato and put it in a microwave on the highest setting of a normal home appliance.
  3. Microwave for 5 minutes on one side
  4. Carefully switch on the other for another 5 minutes
  5. Take it out and slice it in half. If the center is soft – you are good to go. If not, microwave it for 1 or 2 more minutes

Buttery bacon and spinach gnocchi

Bacon and spinach gnocchi with a butter sauce are some of the most tenderly delicious gnocchi recipes that you will ever find. Before we start, I would like to remind you that if you are interested in learning how to make homemade gnocchi. We have a recipe for that.

So let’s say that you are here after reading the homemade gnocchi recipe, the components that you have to take into account when it comes to cooking gnocchi is that it cooks very fast. So fast that it’s pointless to cook the gnocchi and make the sauce, or try to do them simultaneously – you do everything first and then you do the gnocchi.

You will need:
  1. Bacon – cubed or strips or whatever.
  2. Spinach – fresh, frozen or whatever
  3. Butter
  4. gnocchi – homemade or not
How to get it done:
  1. Depending on the type of spinach that you have all you have to do is sear the spinach in a hot pan with just a tiny bit of oil so it does not stick. It will release a lot of liquid and when those liquids are done, marinate them with salt and pepper. Put it aside and clean the pan
  2. Throw in the cubed bacon in the pan with no oil. Cook them till crispy and retain the bacon fat.
  3. In a big pot of salted boiling water throw in the gnocchi. If they are homemade, cook them till they float. If they are store-bought, cook them based on the directions on the packaging. Drain them after they are cooked
  4. Add a tablespoon of butter in the bacon fat. After it melts, in this order, add the gnocchi and mix it up.
  5. Add the bacon and spinach and mix everything together while turning off the heat.
  6. Everything is ready!

How to make homemade gnocchi

This homemade gnocchi recipe features potato-based delicious pasta-like condiments that are so fun to make and yet packed with a tender and fine taste profile that you cannot forget.

In this post, we will tackle two main ways of doing gnocchi – one the original way, ala romana, and the other is a very forgiving one – simple yet maintaining a similar taste profile – both being delicious homemade gnocchi alternatives.

In a lot of recipes and tutorials on how to make gnocchi, some add parmesan, some add spinach – the core of the matter with homemade gnocchi is that at any moment, you will need the basis to bind the ingredients together – and that is potatoes or potato alternatives, eggs and flour. Mixing and matching is up to you after that.

Ingredients for the original homemade gnocchi ala romana

  • 500gr potatoes
  • 1 egg
  • salt and pepper
  • 90 – 115 gr of flour

Ingredients for the forgiving homemade gnocchi

  • 500gr potatoes
  • 1 egg
  • salt and pepper
  • 200 gr of flour
  • 1 tablespoon of ricotta

How to prepare it:

  1. Boil the potatoes in salted water and then peel them once they get a bit colder so you do not burn yourself
  2. Mash the potatoes until they are properly creamy. You can do it with a potato masher, or if you are like me – not fancy at all, you can do it with a fork.
  3. After the potatoes are a bit colder throw in the egg. The reason why we are letting them get colder is that we do not want to cook the egg.
  4. Forgiving gnocchi only: Add the ricotta and mix everything up.
  5. Add salt and pepper to marinate. Not too much – think of salting a salad that size. We just want a bit to make the gnocchi tastier.
  6. At this point, slowly add the flour. Add a bit of flour, mixt it up, add more, mix it up in this order until everything is fully together.
  7. We are looking for a sticky mass so flour a kneading surface generously and add the potato/flour mass.
  8. Here you will need to work it and knead it properly. If it feels that the dough is a bit too soft, you can adjust with a bit of flour – but keep in mind, it should be soft – as long as it sticks together.
  9. Divide the dough into 4 pieces and take one of them. Roll it out in thin strips, with a thickness about the size of your index finger.
  10. Cut them in small cuboids, like in the picture below. As always, for the love of what’s holy, your hands and the surface that you are working should be properly and generously floured.
  11. The most complicated part is here. If you put them like the picture, they will lose the form, so I would recommend cooking them on the spot.
  12. Sprinkle them with a bit of flour so they do not stick.
  13. If you are feeling fancy, you can give them a form with a fork, but that’s just for show. I would focus on the sauce much better.
  14. Cooking time is actually fairly simple – over boiling water, throw them in but do not overcrowd the pot. They will. fall on the bottom. They are cooked when they float to the surface. Usually 2-3 minutes.

That’s it – you can easily cook them with any recipe, but I would recommend them with a butter, spinach and bacon sauce.

Simple carbonara recipe [video]

The carbonara recipe is one of those recipes that it features a combination of ingredients that almost everyone has in the house and requires no knowhow of anything. With just pasta, eggs, cheese, pepper and some sort of cured pork, you get a creamy and delicious pasta recipe.

Note that this is not the traditional approach, but a simplified and easier approach that you can reach the same exact conclusions.

You will need:

  1. Pasta
  2. 3 egg yolks and 2 eggs
  3. 100gr of pecorino romano
  4. some sort of cured pork (bacon works, guanciale is the original way of doing it, but it’s an Italian ingredient that you can find on specialty stores – other words for expensive)
  5. fresh ground pepper

How to get it done:

  1. Beat the 2 eggs.
  2. Add the egg yolks and mix properly
  3. Add the pecorino romano
  4. Mix thoroughly until the whole thing is together and set it aside.
  5. Cook the bacon in a big pan (we will use this pan to add the pasta later, so keep that thing in mind). As always, start with a cold pan and no oil. We are looking for crunch here. After they are cooked, remove them from the pan with a slotted spoon as we want to keep the remaining fat. If you would have guanciale, it’s even fatter than bacon, so I would use less – like 3 thick strips. Once done, set aside as well.
  6. Cook the pasta – if you think i need to explain a lot more here, let me know, but I am sure that if you are here, you know how to boil some pasta.
  7. Drain the pasta.
  8. Put the pan that had the bacon fat in it, back in the heat. We are looking for the bacon fat to heat again – it should not take much though.
  9. Remove from heat and add the pasta in the pan. Mix everything up. Give it 30-60 seconds. If the bacon fat was smoking, let it sit for a bit.
  10. IMPORTANT: throw in the eggs and cheese mixture and mix everything quickly. We do not want the egg to cook so you have to move quickly. In this step, the cheese will melt and the egg will combine with the melted cheese.
  11. Add the bacon and add some freshly ground pepper on it.

Eat immediately as for this carbonara recipe we do not want the cheese to harden.

Crispy and spicy leftover home fries

Home fries are the ideal recipe when you have some leftover boiled potatoes. Now, if you just want home fries, you can simply boil some potatoes – they do not have to be leftover.

To get this done we just need to put a nice crisp on all the sides of the potatoes, so it’s important not to overcrowd the pan. Also as we are doing this, we will also marinate them properly to add some zing to the boring potatoes.

Step by step instructions

For that we will need:

  1. Whatever boiled potatoes you got, cut in quarters or even smaller if it makes you happy
  2. Olive Oil
  3. Butter
  4. Salt and pepper
  5. Smoked or spicy paprika
  6. Some cayenne pepper
  7. Oregano
  8. Whatever spices that make you happy

How to get it done:

  1. In a hot pan add some olive oil and throw in the potatoes.
  2. Marinate them with everything that you have on the list
  3. Dont touch it. We are looking for the potatoes to crisp on one side.
  4. After a couple of minutes, turn them all around.
  5. Don’t touch it again. We are looking for this other side to crisp
  6. And that’s it. Ready ready.

Now, this type of dish is actually a side dish – it’s the perfect addition to anything. I actually made something similar with Oven-roasted baby potatoes. Note though, on my latest post, the pan-fried chicken with mushroom sauce this would be awesome. To be brutally honest, this recipe is actually specifically made as a side for that creamy mushroom chicken – as you may have noted from the image.
